Pumpkin Pie overnight oats 😳
I’ve been craving Pumpkin since September 1st. It’s this weird thing where September rolls around and all I can think about is PUMPKIN ALL THE THINGS. So OF COURSE I had to make something that had pumpkin in it and was relatively healthy.
Enter overnight oats.
I have my go to recipe for overnight oats and I never ever change it up. I mean..if it’s not broke…don’t fix it right?! But then I go it a wild idea from a friend to make pumpkin pie overnight oats. I mean…I had to try it out.
And guys…it did not disappoint. These oats taste like pumpkin pie filing. So basically pumpkin pie without the crust. I mean..the crust is my least favorite part of pumpkin pie anyways…so these were perfection.
These are super simple to make. You basically just dump everything in a bowl, mix together and store in an airtight container. Bam..done.
Plus you can double or triple the recipe easily and make your breakfast for the week. An easy meal prep on Sunday for a delicious breakfast all week long. It doesn’t eat much better than that my friends.
Pumpkin Pie Overnight Oats
Easy and delicious overnight oats that taste just like Pumpkin Pie. The perfect breakfast for Fall.
- 1/4 Cup Pumpkin Purée
- 1/2 Cup Vanilla Almond Milk
- 1/2 Cup Rolled Oats
- 1 1/2 Tbsp Maple Syrup
- 1 1/2 Tbsp Brown Sugar
- 1/4 Tsp Cinnamon
- 1/8 Tsp Nutmeg
- 1/8 Tsp Cloves
- 1/8 Tsp Ginger
In a big bowl, whisk together rolled oats, brown sugar, cinnamon, nutmeg, cloves, and ginger.
In a separate bowl, combine pumpkin purée, vanilla almond milk, and maple syrup. Mix well.
Mix wet ingredients into dry ingredients and mix well. Put in an airtight container and let sit in the fridge overnight.
*Pro tip...This recipe doubles and triples easily and will keep in the fridge for about a week.
